beer and cookies

beer and cookies

I have not had a beer since a week after my surgery. I demanded one today. I needed it. O, beer is as delicious as I remember.

I've never been much of a cookie baker, but after having spent three years immersed in baking, I did some research. I mean, who said the Nestle's bag recipe was the only one? Yeah, they're good, but I was always turning out odd, puffy, bland cookies.

So I took Alton Brown's recipe for spread-out cookies, and I made a few substitutions. For instance, how can a cook worth his salt recommend unhealthy "shortening" or butter-flavored lard? BUTTER, baby. Butter. Salted.

So here's the new and improved recipe. If you have brown sugar, use a cup of it and a half cup of white sugar.

Sift and set aside:
2 1/4 C flour
1 t baking soda
1 t salt

2 sticks butter, melted
1 1/2 C sugar
? C molasses

1 egg
1 egg yolk
2 T milk
1 T vanilla

Add dry ingredients slowly.
1 bag chocolate chips
1 C pecans, chopped fine (opt.)

Heat oven to 350.
Refrigerate cookie dough for 15 minutes.
Drop by rounded spoons and bake anywhere from 5-15 minutes.

These cookies are INCREDIBLE! They are flat and chewy and YUM.

noodles with veggies (recipe modified from Soba Noodles with Tofu and Veggies) and tea marbled egg. i love the sauce on the noodles! something i will definitely do again, and keep in mind for a spring roll dipping sauce.

could not find the package of soba (100% buckwheat) noodles i know i have, so did a substitution with quinoa pasta. because the quinoa was so hard and gritty, i decided to go ahead and sauce the noodles ahead of time, and store them in the fridge that way. made a big difference -- the softened up to a perfect al dente, and really soaked in the flavor.
